Plum, Cashew & Rocket Salad, Dill Vinaigrette

Something Clean Something Green

As it’s plum season, and the Victoria plum tree in my parents garden is suffocating under the weight of this year’s crop, so it seemed improper to not capitalise on this! Dill is one herb that I don’t think gets enough attention and credit. You’d often find it used with salmon, including as a flavouring when making gravadlax (one of my all time favourite foods!), but it works really well in salads too! It’s got a mild, very slightly aniseed flavour, and I’ve used it to flavour a simple vinaigrette that works perfectly here! The combination of sweet plums, nutty cashews, peppery rocket and fragrant herbs make this salad a total winner. It would be a perfect as part of a light lunch, and I think you’ll all love it!
