I could eat this with any meal really and also makes a great dip for tortilla chips or for Paleo people you could use plantain chips.
Babagnoush is so simple to make and the warmth from the sesame paste (tahini) makes it super comforting.
I am sure there are a few recipes online much like this, it’s quite standard but so worth making it from scratch.
