What to do with over ripe bananas?

Banana bread usually pops to mind. I wanted to do something a little different.

You could actually fry these, but with my bikini diet to think off and the drizzle of syrup, I decided to bake these little puffs of banana goodness.

The key for this is over ripe bananas which mean you don’t need to add sugar to the batter mix. If you have semi ripe nana’s you might need to add a little syrup to the mix.


  • 2 x over ripe bananas
  • 1/4 cup coconut milk
  • 1/2 cup ground almond
  • 1/4 cup tapioca flour
  • 1 x egg
  • 1 tsp baking powder
  • 1 tsp allspice


  • Maple syrup
  • Chambord

Add the banana batter  ingredients together and mush the bananas in with this to form a smooth consistency.

Preheat the oven to 180 degrees.
